  • This dish is fun and easy to make -the healthier way to eat chicken goujons.

    Ingredients

    Serves 4 people
  • Oatie Chicken Goujons
    • 50 g Almonds
    • 4 x Chicken Breast
      boneless & skinless. Cut into long, thin strips
    • 1 large Eggs
      beaten
    • 1 tbsp Olive Oil
    • 1 tsp Paprika
    • 2 tbsp Plain Flour
    • 25 g SuperValu Goodness Mixed Nuts
      (optional)
    • 50 g SuperValu Quick Oats 500g
  • For the Sweet Potato Wedges
    • 1 pinch Black Pepper
    • 2 tbsp Olive Oil
    • 1 pinch Salt
    • 1 tbsp SuperValu Fresh Thyme
    • 2 x Sweet Potatoes
  • To Serve
    • 1 x Lime
      cut into wedges
    • 1 bunch SuperValu Iceberg Lettuce
    • 1 x Tomato Salsa
  • Method

    1. Preheat the oven to 190°C/gas mark 5.
    2. Peel the sweet potatoes (or you can leave the skin on if you like) and cut into wedges. If you’d like them to be crispier, then cut them smaller and finer.
    3. Place the wedges on a baking tray and toss with the oil and thyme, then season well with salt and pepper.
    4. Roast in the oven for 15 to 20 minutes, then turn the wedges and continue to roast for another 15 minutes, until crispy and lightly browned.
    5. Meanwhile, place the almonds, oats and mixed nuts (if using) in a food processor and whizz until they are the texture of breadcrumbs. Add the paprika and whizz for 10 seconds more, then tip out onto a large plate or place in a ziplock bag.
    6. Place the flour on a separate plate and the beaten egg in a shallow bowl. Roll the chicken strips first in the flour, then dip in the egg, allowing any excess to drip back into the bowl, and then into the oat and nut mixture until thoroughly coated.
    7. Place the coated chicken goujons on a baking tray greased with the tablespoon of oil. Cook in the oven with the sweet potatoes for 15 to 20 minutes, until the chicken is thoroughly cooked and the coating is crisp and golden.
    8. Serve the goujons with lettuce leaves, lime wedges, salsa and the sweet potato wedges.
